Successful “Fried noodles” with a pan

Chop up the pork and vegetables. Loosen the noodles by adding salad oil.

The noodles may stick to the pan if they are dry.

Preheat the pan over medium heat with a lid on it. Heat the pan until drops of water become balls rolling around in the pan.

Put the pork in the pan, cover with the lid and lower the heat.

Lower the heat after putting the lid on. Oil will be drawn out from the sliced pork after 1 to 2 minutes of heating with the cover on.

When oil is drawn out from the pork, take the lid off, and stir the vegetables over medium heat.

Add noodles when the vegetables have softened, add a spoonful of cooking wine, bring to low heat, and put the lid back on.

This process will draw the moisture out of the vegetables, and it will be easier to stir.

Turn the heat back to medium, add salt, pepper and stir. Turn off the heat, and add the sauce.

If the noodles are heated too long after adding the sauce, it may cause burns.
Adding the sauce and mix using residual heat after turning off the heat is ideal.
